In a medium skillet combine tomatoes, Kick’n Curry Mole and olive oil. Bring to a boil, reduce heat.
Crack each egg into the simmering sauce. Cover and simmer until the whites are set and the yolks are still runny, about 5 minutes.
Arrange the grilled bread on serving plates or shallow bowls. Place an egg on each slice of toast and spoon sauce over.
